About the raw material

Taste
There are two different types of quince, the pear quince being the most common. The taste is slightly sweet and sour and does not have much aroma.

Origin
The quince has been popular since ancient times, when it was a symbol of fertility. Today it is cultivated in Asia, South Africa and Mediterranean countries.

Season
In our country, quinces are in season from August to November, but they are also imported from abroad.

Good for
When cooked, quinces create a perfect balance between sweetness and tartness, and they do well in jams and preserves.
