Lime tarts with blackcurrants

Ingredients

  • 100 g soft butter
  • 50 g cane sugar
  • 1 tsp. vanilla sugar
  • 1 egg white
  • 75 g almond flour
  • 100 g wheat flour
  • 125 g cream cheese
  • 25 g cane sugar
  • 25 g soft butter
  • 1 egg yolk
  • 1/2 tbsp. cornstarch
  • 1/2 tsp. finely grated lime zest
  • 2 tsp. lime juice
  • 50 g Skælskør Frugtplantage® blackcurrant jam

Preparation

1. Beat butter with cane sugar and vanilla sugar

2. Add the egg white and beat well until light and fluffy

3. Stir the almond flour and wheat flour into the dough and knead well

4. Divide the dough into small, greased moulds and bake for about 15 minutes at 175°C

5. Beat the cream cheese with the cane sugar and butter until creamy and smooth

6. Add the egg yolk, cornstarch, lime zest and lime juice and mix well

7. Spread the cream in the baked shells and spread the blackcurrant jam on each cake

8. Using a toothpick or the tip of a knife, pull the blackcurrant jam into the surface to form a fine pattern

9. Bake the cakes for about 10 minutes at 175°C and allow to cool before serving.
