Crema catalana with raspberry jam and fresh berries

Ingredients

  • 3 dl. whole milk
  • 2 dl. whipping cream
  • 1/2 tsp. ground cinnamon
  • 1 tsp. vanilla sugar
  • 1 orange
  • 4 egg yolks
  • 2 tbsp. cane sugar
  • 1 tbsp. cornstarch
  • 5 tbsp. cane sugar
  • 4 tbsp. raspberry jam
  • 100 g fresh berries, e.g. blueberries, currants and blackberries

Preparation

1. Boil the milk and cream with cinnamon and vanilla sugar.
2. Finely grate the orange zest, stir it into the milk mixture and let the mixture cool slightly.
3. Beat the egg yolks with cane sugar until light and frothy.
4. Add the cornstarch and beat well. Pour the cooled milk mixture into the egg mixture and beat well.
5. Pour back into the saucepan and heat slowly while whisking until the cream has thickened.
6. Divide the cream into 4 small, shallow bowls and place in the fridge for 3-4 hours.
7. Sprinkle cane sugar on the surface and burn the sugar with a small burner until it melts and caramelizes. Alternatively, place the bowls in the oven under the broiler for a short time until the sugar has melted. Leave to cool until the sugar coating has hardened.
8. Spread the raspberry jam on top of the sugar layer and garnish with fresh berries.
