Eclairs with raspberry foam

1. Heat water and butter to boiling point in a saucepan.

2. Add the flour and stir until the dough releases the edges and has a firm consistency.

3. Let the dough cool slightly.

4. Add the eggs one at a time, beating constantly.

5. Fill the dough into a piping bag and make oblong eclairs on a baking tray with baking paper.

6. Bake the cakes for about 25 minutes at 200 degrees convection oven. Do not open the oven during baking.

7. Whip the cream until stiff and then fold in the raspberry jam.

8. When the cakes are completely cold, cut them in half with a knife and spread the cream gently on the bottoms.

9. Finally, decorate with icing and freeze-dried raspberries.
