Raspberry macarons

Ingredients

Preparation

Bundles:

1. whisk egg whites with salt and sugar until stiff.

2. Whisk in the color.

3. Sift the almond flour and icing sugar into the meringue.

4. Fold everything together until the dough is slightly liquid and can form a figure 8.

5. Spray onto a baking sheet lined with paper (tap the baking sheet on the table to pop any air bubbles).

6. Let it dry for 1 hour.

7. Bake the bases at 150c for 15-20 minutes. Check if they are done by lifting one of the macaron shells. If they release relatively easily, they are done.

Ganache:

1. Bring the cream to the boil.

2. Chop the chocolate and pour the boiling cream over it. Stir until the chocolate is melted and the ganache comes together.

3. Add the raspberry jam and blend the ganache.

4. Place in the fridge until set.

5. After cooling, fill with ganache.

6. Refrigerate for at least 2 hours before serving.
