Shortcrust pastry base with chocolate mousse

Ingredients

Preparation

Bundles:

1. Place the flour, icing sugar and butter in a food processor and process until crumbly.

2. Add the egg and mix just until the dough has come together.

3. Refrigerate for one hour.

4. Roll out the dough and cut out small circles.

5. Bake for 20 min at 175 degrees until golden.

Orange chocolate mousse:

1. Soak the gelatine in cold water.

2. Chop the dark chocolate and heat half of the cream to boiling point.

3. Remove the water from the gelatine and add the hot cream.

4. Pour the hot cream over the chocolate.

5. Stir together into a smooth mixture and let it cool until it's warm to the touch.

6. Whip the rest of the cream to a light froth and fold it a little at a time into the chocolate mixture along with the orange marmalade.

7. Pour the chocolate mousse into silicone molds and refrigerate or freeze until set.

8. Remove the chocolate mousse from the molds and place them on the shortcrust pastry bases.

8. Decorate the mousse hemispheres with crushed dried and caramelized orange.
