Brownie with strawberry mousse

  • 50 g butter
  • 50 g chopped light chocolate
  • 1 egg
  • 50 g cane sugar
  • 25 g almond flour
  • 1 tsp. baking powder
  • 1,5 dl. Skælskør dessert cream
  • 1 sheet of husblas
  • 25 g white chocolate
  • 75 g Skælskør strawberry jam
  • 2 tbsp. freeze-dried strawberries


1. Melt the butter in a small saucepan, add the chocolate and remove from the heat
2. Beat the eggs and cane sugar until light and fluffy and add the butter-chocolate mixture
3. Stir in the almond flour and baking powder
4. Put the batter in a small baking pan (approx. 20 x 25 cm) and bake at 170 for 12-15 minutes.
5. Whip Skælskør dessert cream until light foam
6. Soak the husk in cold water
7. Melt the chocolate and add the soaked husblas to the hot chocolate, stir well so that the husblas melts
8. Gently fold the chocolate mixture into the dessert cream
9. Mix the strawberry jam into the cream and pour into small round silicone moulds
10. Cut the brownie base into suitable circles and place a piece of base on each mousse.
11. Chill the cakes for a minute. 3 hours, until the mousse has set
12. Turn out the cakes and garnish with freeze-dried strawberries.
