Almond cake with lemon and blackcurrant

Ingredients

  • 150 g butter
  • 250 g almond flour
  • 200 g sugar
  • 5 eggs
  • Juice and zest of 1 lemon
  • 1 jar of sugar-reduced blackcurrant jam from Skælskør Frugtplantage®
  • 40 g almond slivers

Preparation

1. Melt the butter and mix it with the almond flour and sugar.

2. Add the eggs, lemon juice and lemon zest and mix well with a spoon.

3. Put the batter in a greased springform pan, spread the blackcurrant jam on the surface and sprinkle with almond slivers.

4. Bake the cake for about 50 minutes at 160°C.

5. Let the cake cool and serve with a little sour cream if you like.
