Ingredients
- Pancake batter:
- 2 eggs
- 150 g wheat flour
- 2,5 dl milk
- 2 tbsp. sugar
- 1 pinch of salt
- 50 g butter
- Strawberry/rhubarb foam:
- 1 pack of Skælskør Frugtplantage® Strawberry/rhubarb porridge
- 0.5 l whipping cream
- Edible flowers for decoration
- Fresh berries
Preparation
1. Mix the eggs, wheat flour, milk, sugar and salt together into a thick, lump-free mixture.
2. Bake about 8 pancakes in butter in the pan.
3. While the pancakes are cooling, whip the cream to a stiff froth and add the strawberry/rhubarb porridge.
4. Assemble the pancake cake by layering a pancake and a thin layer of strawberry/rhubarb foam.
5. Finish with a little strawberry/rhubarb foam on top of the top pancake and garnish with fresh berries and edible flowers.
