Fragilité roulade with sea buckthorn/apple foam

Ingredients

Preparation

1. Beat the egg whites until stiff and add the caster sugar a little at a time while still beating.

2. Stir the white wine vinegar and hazelnut flakes into the dough.

3. Spread the dough on a piece of baking paper in a square, approx. 30 x 35 cm.

4. Bake the base for 20 minutes at 160°C and let it cool for 5-10 minutes.

5. Place a piece of baking paper over the baked base and place a large cutting board or baking sheet over it. Turn over and carefully remove the baking paper from the base.

6. Now roll the base along the long edge like a roulade - do not roll it tightly, but only so that it can cool in the rolled shape.

7. Whip the cream and add the sea buckthorn/apple jam to a creamy froth.

8. Carefully roll out the roulade base again and spread the sea buckthorn/apple foam.

9. Carefully roll the roulade around the filling, garnish with fresh apples, sea buckthorn and some hazelnut flakes and serve.
