Eclairs with strawberry cream

1. Put the water and butter in a pan and heat until the butter is melted.

2. Add the flour and sugar and mix well.

3. Transfer the dough to a bowl and let it cool for a few minutes.

4. Now stir the eggs into the dough one at a time, stirring thoroughly along the way.

5. Put the dough in a piping bag with a large star tip and pipe the dough into 8-10 cm long pieces on a baking tray lined with baking paper.

6. Bake in the oven at 200°C for 15-20 minutes.

7. Let the cakes cool completely.

8. Whip the cream until it foams, add the mascarpone and strawberry jam and whip the cream well.

9. Cut the cooled eclairs and spread the strawberry cream in them.

10. Mix a glaze of icing sugar and water and spread the glaze over the cakes.

11. Sprinkle with a little chopped pistachio and freeze-dried raspberries.
