1. Combine the lemon zest with the sugar in a small bowl - stir - and set aside.

2. Blend the jam with lemon juice, add the sugar and lemon zest mixture and blend again.

3. Transfer the mixture to a stainless steel bowl, stir in the butter and place the bowl on top of a pot of simmering water (the water should not touch the bottom of the bowl).

4. Beat the eggs in a clean bowl and whisk them together with a hand mixer until you reach a frothy consistency.

5. Whisk the jam mixture on top of the boiling water - a hand mixer can be used here - and then add the eggs, whisking constantly until the mixture thickens to the consistency of cream.

6. Remove the pan from the heat, but continue to whisk the curd for another minute.

7. Transfer to one or two small glasses, cover the surface with a piece of parchment paper and allow to cool.

8. Close the jars and refrigerate.
