Mini pies with apricot gooseberry jam

1. Mix the flour and sugar in a bowl.

2. Crumble in the butter and combine the dough with the egg yolk and a little water if necessary.

3. Refrigerate the dough for at least 30 minutes.

4. Roll out the dough, place in greased tart tins and bake for 10 minutes at 180 degrees.

5. Cool the bottoms slightly.

6. Spread the apricot gooseberry jam over the bases.

7. To make the filling, beat the butter and icing sugar until light and fluffy.

8. Add the eggs and finally mix in the remaining ingredients.

9. Spread the mixture over the jam and sprinkle with almond slivers.

10. Bake the mini pies for about 20 minutes at 190 degrees.

TIP: Serve the mini pies warm with whipped cream or crème fraîche.
