Water biscuits with risalamande

  • Water pastries:
  • 1,5 dl water
  • 75 g butter
  • 100 g wheat flour
  • 3 eggs
  • Risalamande cream:
  • 2 dl whole milk
  • 1⁄2 vanilla pod
  • 2 eggs
  • 2 tbsp. sugar
  • 1 tbsp. wheat flour
  • 1 sheet of husblas
  • 1.5 dl whipping cream
  • 50 g crumbled, chopped almonds
  • Other:
  • Pureed cherry sauce from Skælskør Fruit Orchard


1. Turn on the oven and set the temperature to 200°.

2. Bring the butter and water to the boil. Add the flour and stir vigorously until the dough releases from the pan.

3. It needs to be heated thoroughly and glossy.

4. Cool the dough slightly and stir in the eggs one at a time.

6. It is important to stir well with each egg so that the dough does not become thin.

7. Pipe the dough onto a baking sheet lined with baking paper with a star-shaped spatula into round peaks with a diameter of approx. 6 cm.

8. Bake at 200° for approx. 30-35 min.

9. It is important not to open the oven for the first 20 minutes or they will collapse.

10. When they look baked, take one out and place it on the wire rack. If it holds its shape, they are done, but if it starts to collapse, they need a little more.

11. Heat the milk to boiling point in a saucepan with the vanilla seeds.

12. Beat the eggs, sugar and flour until fluffy and whisk in the warm milk a little at a time.

13. Return the mixture to the saucepan and heat, stirring, and cook until the cream is smooth and thick. Set the cream aside to cool.

14. Soak the gelatine in cold water for about 5 minutes and melt it with the remaining water over a water bath. Stir a few spoonfuls of the cream into the melted gelatine.

15. Whisk the rest of the cream and stir in the gelatine cream a little at a time. Whip the cream to whipped cream and gently fold it and the chopped almonds into the cream. Chill in the fridge until serving.

16. Split the cooled water biscuits and fill them with some berries and cream.

17. Garnish with the pureed cherry sauce on top.
