Cheesecake with blackcurrant jam

Cheesecake

Ingredients

  • Covenant:
  • 250 g oat crackers
  • 100 g melted butter
  • Filling:
  • 400 g cream cheese
  • 2.5 dl. Skælskør Frugtplantage® Dessert cream with vanilla
  • 2 tsp. finely grated lime zest
  • 3 eggs
  • 1 dl. sugar
  • Top:
  • 4 tbsp. sour cream
  • 4 tbsp. Skælskør Frugtplantage® blackcurrant jam

Preparation

Covenant:

1. Finely crush the oatcakes or process them in a food processor until all pieces are ground.

2. Mix the oatcakes with the melted butter and press the mixture into a springform pan lined with baking paper.

3. Put the mould in the fridge while the filling is being prepared.

 

Filling:

4. Beat the cream cheese well with the dessert cream, then add the lime zest and sugar and beat well.

5. Add the eggs one at a time and beat well.

6. Put the filling in the springform pan and bake the cheesecake for about 45 minutes at 150°C.

 

Top:

7. Take the cake out of the oven and spread sour cream first, then blackcurrant jam on the surface, and bake again for 5-10 minutes.
