Apple mousse cake with burnt meringue

Ingredients

Preparation

1. Blend the oatcakes and mix with melted butter. Press the mixture into a small baking pan (approx. 15×20 cm) and chill.
2. Whip the cream until it foams and add the cream cheese, icing sugar and vanilla sugar. Whip the cream well.
3. Mix the Skælskør fruit porridge into the cream and stir well until the fruit porridge is distributed.
4. Soak the husblas in cold water for about 5 minutes. Remove the water and melt the bubbles by pouring 2-3 tablespoons over them. boiling water. Stir until the husk is dissolved, then pour into the apple cream while whisking.
Spread the apple cream on the oat biscuit base and chill the cake for at least 3-4 hours.
6. Beat the egg whites with the icing sugar until stiff and put into a piping bag.
7. Cut the cooled cake into small squares and decorate with the meringue from the piping bag. Burn the meringue to a light golden colour.
8. Decorate the cakes with, for example, freeze-dried berries, wood sorrel or lemon balm.
