Apple mousse cake with burnt meringue

Preparation

1. Blend the oat biscuits and mix with melted butter. Press the mixture into a small baking pan (approx. 15×20 cm) and chill.
2. Whip the whipping cream until frothy and add the cream cheese, icing sugar and vanilla sugar. Whip the cream well.
3. Mix the Skælskør fruit porridge into the cream and mix well until the fruit porridge is distributed.
4. Soak the gelatine in cold water for about 5 minutes. Wring out the water and melt the gelatine by pouring 2-3 tbsp. boiling water. Stir until the gelatine is dissolved and then pour it into the apple cream while whisking.
5. Spread the apple cream on the oat biscuit base and chill the cake for at least 3-4 hours.
6. Whisk egg whites until completely stiff with icing sugar and place in a piping bag.
7. Cut the cooled cake into small squares and decorate with meringue from the piping bag. Burn the meringue to a light golden color.
8. Decorate the cakes with e.g. freeze-dried berries, sorrel or lemon balm.
