Strawberry cheesecake

Ingredients

  • Covenant:
  • 175 g digistive biscuits
  • 100 g melted butter
  • Strawberry cheese cream:
  • 2 leaves husblas
  • 200 g natural cream cheese
  • 1 dl sugar
  • 1 tsp. vanilla sugar
  • 1 tbsp. lemon juice
  • 1 jar Skælskør Frugtplantage® Strawberry jam
  • 3 dl whipping cream
  • Garnish:
  • Fresh strawberries

Preparation

1. Crush the biscuits and mix in the butter.

2. Put the biscuit mixture in the bottom of 6 small serving glasses or a springform pan (18 cm. in diameter)

3. Soak the husk in cold water for about 10 minutes.

4. Mix the cream cheese with the sugar, vanilla sugar and lemon juice. Mix in the strawberry jam.

5. Whip the cream to a light froth.

6. Melt the cornflour over a water bath and add a little of the whipped cream to cool down.

7. Stir the whipped cream into the cream cheese cream and pour the mixture over the base.

8. Refrigerate the portioned cheesecakes for 3-4 hours before serving.

9. Garnish with fresh strawberries before serving.
