Brownie cake with strawberry mousse

Brownie bottom:

1. Melt the butter and chocolate in a saucepan.

2. Beat the eggs, sugar and vanilla sugar in a bowl until fluffy and stir in the chocolate mixture.

3. Stir the flour into the dough and pour it into a greased springform pan.

4. Bake the brownie base for approx. 25 minutes at 180 degrees.

5. Cool the cake completely and put the bottom in a clean springform pan.

Strawberry mousse:

1. Put the strawberry porridge in a saucepan and blend it with a hand blender to obtain a smooth texture.

2. Heat the fruit porridge.

3. Soak the ice cream in cold water for about 10 minutes and melt it in the fruit porridge.

4. Allow the mixture to cool slightly.

5. Beat the egg yolks and sugar to a light consistency and mix in the strawberry cream.

6. In another bowl, whip the cream until light and fluffy and gently fold in the strawberry mixture.

7. Pour the strawberry mousse over the brownie base and refrigerate for at least 3 hours until the mousse has set.

8. Cut out small cakes with a pastry ring.

9. Garnish with strawberries before serving.

TIP: The strawberry mousse is also delicious on its own. Pour the mousse into 4 small serving glasses and refrigerate for at least 2 hours before serving.
