Coconut fritters with blackcurrant jam

Ingredients

Preparation

1. Mix the flour, coconut and icing sugar in a bowl. Crumble in the butter.

2. Press the dough out onto a baking tray lined with baking paper.

3. Bake the base for about 15 minutes at 190 degrees convection and then leave to cool completely.

4. Spread the jam over the base.

5. Beat the eggs and sugar until light and fluffy, then mix in the butter and coconut flour.

6. Spread the coconut topping over the entire cake and bake for a further 25 minutes, until the surface is golden and crisp.

7. Allow the cake to cool completely before cutting into slices.
