Frozen yoghurt mousse with strawberries and lime

Ingredients

  • 3 egg whites
  • ½ dl cane sugar
  • 3 dl natural yoghurt
  • 1 dl. Skælskør Strawberry Jam
  • 1 tsp. finely grated lime zest
  • Garnish with finely grated lime and a little extra strawberry jam

Preparation

1. Beat the egg whites until stiff and add the cane sugar a little at a time.

2. Stir in the yoghurt, strawberry jam and finely grated lime zest and put the mixture in a freezer-safe dish.

3. Put the mousse in the freezer for 1-2 hours, stirring once along the way.

4. Serve the ice cream with some finely grated lime zest and strawberry jam.

Tip: This dessert is at its best when it is not frozen for more than a few hours and the consistency is still soft. However, it can be made further in advance, but requires a slow defrost in the fridge before serving, after which it needs to be stirred well to get the creamy consistency.
