Muesli rolls with cranberries and nuts

  • 15 g yeast
  • 475 g cold water
  • 130 g natural yoghurt
  • 1 tbsp. syrup or acacia honey
  • 1 tsp. ground cardamom
  • 1 tsp. salt
  • 200 g muesli
  • 1 egg
  • 50 g cranberries
  • 40 g walnuts
  • 40 g sesame seeds
  • 100 g spelt flour
  • 500 g wheat flour

1. Dissolve the yeast in the water and then add the yoghurt, syrup, cardamom, salt, muesli and an egg. Stir together.

2. Add the cranberries, walnuts, sesame seeds and spelt flour. Mix well in a mixer for a few minutes.

3. Add the wheat flour a little at a time and knead well for about 5-7 minutes.

4. Place a damp tea towel over the bowl and refrigerate overnight or for at least 8 hours.

5. Use a spoon to shape 10 buns. Place them on a baking tray lined with baking paper and leave to rise for 40 minutes.

6. Turn the oven to 220 degrees, over-under and bake the buns for about 20 minutes.

7. Serve with jam.
