What's the difference between jam and marmalade?
Do you also love a toasted slice of French bread with jam, or is it really jam that you like best? The two definitions are incredibly close, but do you really know the difference between jam and marmalade? In the old days, the difference between the two was obvious, but over time the difference in definition has become less and less.
Let's start with the biggest and clearest similarity between the two. Both jams and preserves are similar in the sense that they contain fruit and berries as their main ingredient. Looking at the Marmalade Regulation, however, there are some key differences that set them apart.
Jams consist of whole fruits
A major difference between jams and preserves is the content of whole fruits/fruit pieces. Jam is made from pure fruit purée, which means that it does not contain whole fruit, whereas jam must contain whole pieces of fruit.
Difference in consistency
The main difference that can be seen between jams and marmalades is their consistency. Jams are thinner and have a more liquid consistency, whereas the Marmalade Ordinance requires jams to have a jelly-like consistency. This makes jam thicker than jam. However, it may be a matter of judgement how to interpret the two consistency descriptions.
The amount of fruit and berries
In the Marmalade Order, there is another difference between marmalade and jam, and that is the requirement for the quantity of fruit and berries. According to the Order, jam must contain at least 45% fruit, whereas marmalade must contain only 35% fruit.
Of these, however, there are a few deviations on individual fruit and berry types, where the requirement for the content is lower. These include blackcurrants, passion fruit, quince, rosehips, ginger, cashew apple and citrus fruits.
